Gentleman`s paella
The origins of this shell-off seafood paella date back to the beginning of the 20th century. Its name, “del Senyoret” — meaning “of the little gentleman” — comes from the Valencia region, where the term traditionally referred to a young gentleman of the upper classes who preferred not to handle or peel the seafood in his paella. To accommodate this preference, the cook would carefully prepare and peel the seafood before serving.
We continue this cherished tradition today. Our prawns are first cooked shell-on to release their full depth of flavour into the paella. They are then carefully peeled by hand and returned to the dish towards the end of cooking, ensuring both exceptional flavour and effortless enjoyment.
Each authentic paella is prepared individually in its own paella pan, never as part of a batch. Our chefs use traditional Spanish techniques and equipment, together with La Marjal protected-origin paella rice from Valencia, extra virgin olive oil, our chef’s signature blend of paella spices, and saffron.
The result is an authentic Valencian paella that celebrates traditional craftsmanship, quality ingredients, and the rich culinary heritage of Spain.
